Ingredients

  • 4 medium russet potatoes
  • extra-virgin olive oil
  • sea salt

Optional Toppings

  • butter
  • sour cream
  • shredded cheddar cheese
  • bacon bits
  • chives, chopped

Directions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Poke each potato several times with a fork.
  3. Rub potatoes with olive oil and season generously with sea salt. Place on the baking sheet.
  4. Bake 45–60 min, until fork-tender and skin is crisp.
  5. Slice open, fluff the insides, and serve with desired toppings.
