Blackened Haddock

Haddock fillets crusted in smoky spices and seared until deeply charred.

Ingredients

  • 12 oz haddock fillets, skinless, cut into halves or thirds
  • 2 tbsp olive oil
  • 4 lemon slices or wedges

Blackened Seasoning:

  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • ½ tsp cumin
  • ½ tsp onion powder
  • ½ tsp chili powder
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • ½ tsp brown sugar

Directions

  1. Mix all seasoning ingredients in a bowl, breaking up any lumps.
  2. Press fillets firmly into the seasoning on both sides to coat.
  3. Heat oil in a skillet over medium-high until shimmering. Add fillets and cook undisturbed for 2–3 minutes per side until blackened and internal temperature reaches 145°F.
  4. Serve with lemon wedges.

Notes

  • Chili powder: Use a chili powder blend, not pure ground dried chilies.
  • Fish: Fresh or fully thawed frozen haddock both work.
  • Serving: Pairs well with buttered basmati rice.
