Ingredients
- 12 oz haddock fillets, skinless, cut into halves or thirds
- 2 tbsp olive oil
- 4 lemon slices or wedges
Blackened Seasoning:
- 1 tbsp paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- ½ tsp cumin
- ½ tsp onion powder
- ½ tsp chili powder
- ¼ tsp dried thyme
- ¼ tsp dried oregano
- ½ tsp brown sugar
Directions
- Mix all seasoning ingredients in a bowl, breaking up any lumps.
- Press fillets firmly into the seasoning on both sides to coat.
- Heat oil in a skillet over medium-high until shimmering. Add fillets and cook undisturbed for 2–3 minutes per side until blackened and internal temperature reaches 145°F.
- Serve with lemon wedges.
Notes
- Chili powder: Use a chili powder blend, not pure ground dried chilies.
- Fish: Fresh or fully thawed frozen haddock both work.
- Serving: Pairs well with buttered basmati rice.
