Ingredients

  • 4 wooden or metal skewers
  • 1 lb ground beef (85/15 or 80/20)
  • 1 cup onion, finely minced
  • 1 tsp garlic, finely minced
  • 2 tsp sweet paprika
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp fresh mint, chopped

Directions

  1. Whisk spices together in a small bowl.
  2. Combine beef, spice blend, garlic, and onion in a large bowl.
  3. Mix until combined. Cover and refrigerate 30 min.
  4. Form beef into log shapes around skewers, pressing to adhere.
  5. Grill over medium-high heat, turning once, 10-12 min total (165°F internal).

Notes

  • Oven: Bake at 350°F for 15-18 min.
  • Wooden skewers: Soak in water 30 min before grilling over open flame.
